Diverse Blueberry Breakfast Menus

One of the tasty berries of summer, blueberries are a very versatile fruit and can go into just about anything, from salads to marinades.  But they're most delicious at the first meal of the day -- exploding pockets of scrumptious sweetness in your various pastries and main breakfast courses.  Here are three delicious blueberry breakfast options, which you can use at your next breakfast in addition to tossing some of these tasty berries into your cold cereal!

Muffins -- blueberry muffins have been a coffee shop classic for a very long time, and they keep their reputation for a reason!  To make your own, you'll need:

-       1 1/2 cups all-purpose flour

-       3/4 cup sugar

-       1/2 tsp salt

-       2 tsps baking powder

-       1 egg

-       1/3 cup milk

-       1 cup fresh blueberries

-       1/2 cup sugar

-       1/3 cup all-purpose flour

-       1/4 cup butter, cubed

-       1 1/2 tsps cinnamon

Combine the first four ingredients in a bowl.  Mix the oil, egg, and milk separately and mix with dry ingredients, then fold in blueberries and fill a greased muffin tin to the top.  Sprinkle with a bit of the other ingredients, cut together with the butter.  Bake for 20-25 minutes in a 400 degrees F oven or until toothpick comes clean.

 Scones -- blueberry scones are equally popular as a breakfast option, and they're super easy to make in your own kitchen!  You will need:

-       2 cups all-purpose flour

-       1 Tb baking powder

-       1/2 tsp salt

-       2 Tbs sugar

-       5 Tbs butter, in chunks

-       1 cup heavy cream

-       1 cup fresh blueberries

Sift the dry ingredients together, then cut in the butter until the mixture appears to be coarse crumbs.  Make a well and pour in the heavy cream, mixing just until combined.  Fold in the blueberries, being careful not to mash them, then press the scones into desired shape (start with a round, cut into wedges for traditional scone shape).  Bake in a 400 degrees F oven for 15-20 minutes until lightly browned.

 Pancakes -- who doesn't love pancakes as a weekend breakfast?  And with the addition of blueberries, these are irresistible.  You will need:

-       2 separated eggs

-       1 1/2 cups all-purpose flour

-       2 1/4 tsps baking powder

-       3 Tbs sugar

-       3/4 tsp salt

-       1 cup milk

-       3 Tbs melted butter

-       1 cup fresh blueberries

Beat the egg whites until stiff.  Mix the dry ingredients together, then mix the lightly beaten egg yolks with the milk and melted butter.  Stir the wet and dry ingredients together, then stir in the blueberries and gently fold in the egg whites.  Cook in a greased hot frying pan or on a griddle.
